Overall, I try to be as healthy as possible, especially during the work week. On the weekends, I allow myself to indulge and these date bars are perfect for just that! The crunch from the crust and crumb topping are the perfect balance to the sweet and creamy date filing. Plus, they are SUPER easy to make! These bars taste very similar to pecan pie except not as rich. If you are looking for an indulgent treat, this one is guaranteed to satisfy!

(You can absolutely make this a little bit more health conscious by subbing regular all-purpose flour for gluten free flour, regular oats for gluten free oats, coconut sugar in place of the white and brown sugar, and coconut oil for butter. Coconut sugar has a lower glycemic index than regular sugar so it doesn’t cause such a spike in your blood sugar levels.)

Dates are full of essential vitamins and minerals, such as calcium, iron (very important for women), phosphorous, sodium, potassium, magnesium, and vitamins A & K (source), so not only are these bars delicious, but they are good for you, too!

2 1/2 cups pitted dates, cut up

1/8 cup sugar

1 1/2 cups water

1 1/4 cups all-purpose flour

1 teaspoon salt

1/2 teaspoon baking soda

1 1/2 cups quick-cooking oats

1 cup packed brown sugar

1/2 cup butter

1 tbsp water


In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Let cool for five minutes.

Combine the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greases 13 x 9 inch baking pan. Spread the date mixture evenly over crust then cover with the remaining oat mixture. Pat lightly.

Bake at 350 F for 35-40 minutes or until lightly browned.

Yields: 40 Bars
